Hollandaise Sauce is a staple for many of us, this is a delicious, very simple low carb variation for you to top on top of your eggs or meat or other wonderful meals:
Primal Flavours Low Carb Hollandaise Sauce
- 1/2 cup of grass fed butter – melted and slightly cooled
- Juice of 1/2 a lemon (about 1 Tblspn)
- Dash of cayenne pepper
- 3 egg yolks
Place the egg yolks, lemon and cayenne pepper in a blender on low speed, and slowly add the butter until it reaches a nice creamy consistency.
If there is any sauce left over, it will set quite hard, but it can be gently reheated (be careful not to boil!) and used over vegetables (or over more Eggs Benedict :-p ). It will keep for several days if kept in the fridge.
Pour the sauce over your poached eggs along with some ham or smoked salmon and toasted Primal Flavours Bread to make a wonderful Eggs Benedict snack, or with the addition of salad or vegetables, it creates a great meal.
