Low Carb Primal Bread

Mmmmm…Bread!

Bread is one of the things both the Primal Labrador (PL) and I had missed the most since going primal, that wonderful soft doughy texture, the taste, and of course that wonderful smell when it is fresh from the oven. It is such a versatile food from toast for breakfast to sandwiches for lunch, or even sopping up the gravy with dinner. Unfortunately, traditional bread is baked using quick release grains and these carbohydrates have a higher GI than table sugar, and therefore are no good for a Primal Body (or anyone else’s!).

Over the past six months or so I have been looking for an alternative to bread. After a lot of experiments and refinements – many of which have were greedily devoured… er… “tested” by the PL – I believe I am coming close to a final recipe.

It is a simple recipe that can be made up in minutes and flavoured in many different ways.

You can use it for sandwiches at lunchtime, a savoury fried puff to use as a potato substitute with your evening meal or even as a sweet pikelet dessert treat, with the PL’s delicious primal ice cream!

Low Carb Primal Bread Slices

2 Serves/Slices

Ingredients

  • 100mls egg whites
  • 1 1/2 Tbsp (25g) flaxseed/almond meal
  • 1 Tbsp (20g) softened cream cheese. Low fat cream cheese can be used to reduce the calories. I also use lactose-free for the PL.
  • 1/8 tsp baking powder
  • Pinch salt

Method

Mix all ingredients together in a jug or bowl well.

Allow to stand for a couple of minutes to thicken.

Spread the mixture evenly onto 2 microwave safe container lids – I use the lid from a ‘Klipit’ container as seen in the picture below:

Put in the Microwave for 2min 20sec (based on 1000W)

Once cooked, remove the slices from lid to a rack or plate for cooling.

The same mixture can also be fried as pikelets in a frying pan, or baked in mini loaf tins for 30 minutes at 180°C.

Bread Variations:

Savoury

  • Bacon and cheese
  • Cheese and onion
  • Bbq Seasoning
  • Garlic, to make an excellent garlic bread

Sweet

  • Cinnamon and sultana
  • Caramel
  • Toasted nuts and honey
  • Banana and walnut
  • Peanut butter
  • Add sweetener of your choice

You can also make a delicious loaf of bread that can be sliced up then toasted, made into sandwiches, or dunked into soups and stews!

Low Carb Primal Bread Loaf

12-14 Slices depending on thickness

Ingredients

  • 600mls egg whites
  • 10 Tbsp (250g) flaxseed/almond meal
  • 6 Tbsp (120g) softened cream cheese. Low fat cream cheese can be used to reduce the calories.
  • 3/4 tsp baking powder
  • Large Pinch salt

Method

Mix all ingredients together in a jug or bowl well.

Allow the mixture to sit and thicken for about 5-6 minutes

Line a loaf pan with baking paper or apply grease.

Pour mixture into a loaf tin.

Bake at 180°C for about 45 minutes, then cover with foil and bake for a further 15 minutes.

Allow to cool in the pan before slicing.
